Turkey Burger
1lb ground turkey
1/4 cup sun-dried tomatoes chopped
1/2 cup crumbled feta cheese or goat cheese
1/2 cup kale, minced
4 burger buns
2 avocados, sliced
1large tomato, sliced
1red onion, sliced and rinsed
lettuce leaves
Prehead grill to 450F (or you can fry in iron skillet with a small amount of olive oil)
In a large bowl, combine the ground turkey, sun-dried tomatoes, cheese and kale. Using hands gets a better mixture. Form 4 burger patties and place on parchment paper until ready to cook.
Lay the burgers on the grill or in iron skillet, cook each side for 7 minutes. Continue to cook until burgers reach 165F.
Remove burgers and let rest.
Cut burger buns in half and add spread mayo or butter on the bread. Place buns on grill or on cast iron grill until brown.
Build your burger with red onions, avocado and tomatoes. Add more mayo or mustard, pickles, ketchup...or other toppings.
Recipe can be doubled if needed.
