Curry Sweet Potato Salad

Ingredients

Prep time:  15 minutes, plus overnight refrigeration

  • 1/2 cup mayonnaise
  • 2 tsp curry powder
  • 1 Tbsp brown sugar
  • 1 tsp course ground mustard
  • 4 cups cooked, peeled and diced sweet potatoes (about 2 large)
  • 1/2 cup dried cranberries ( such as Craisins)
  • 1/2 cup pecan pieces, lightly toasted
  • 2 green onions, sliced tiny
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine mayonnaise, curry, powder, brown sugar and mustard.
  2. Add sweet potatoes, dried cranberries, pecans and green onions.
  3. Season with salt and pepper.
  4. Chill overnight.
