Champagne Chicken with Cream

Ingredients

  • 2 T flour
  • 1/2 tsp salt
  • Dash of pepper
  • 4 chicken breast halves, skinned and boned
  • 2 T butter, melted
  • 1 T olive oil
  • 3/4 c champagne or dry white wine
  • 1/2 c sliced fresh mushrooms
  • 1/2 c whipping cream

Directions

  1. Combine flour, salt and pepper.
  2. Lightly dredge chicken in flour mixture.
  3. Heat butter and olive oil in large skillet.
  4. Add chicken and saute about 4 minutes on each side.
  5. Add champagne and cook over medium heat about 12 minutes or until chicken is done.
  6. Remove chicken and set aside on plate.
  7. Add mushrooms and whipping cream to skillet, cook over low heat, stirring constantly, just until thickened.
  8. Add chicken and cook until heated.
