Polish Beef Roulade
Derezinski's family recipe growing up. But was the americanized named of "Beef Roll Ups"
Ingredients
- 1-teaspoon salt
 - ¼ teaspoon pepper
 - 1/3 cup presifted flour
 - 6 thin 4 ounce slices round steak
 - 3 slices bacon, halved
 - 3 medium dill pickles, halved lengthwise
 - 2 tablespoons shortening
 - 1 finely chopped onions
 - ½ cup finely chopped celery
 - ¼ cup water
 - 1/4-cup liquid from pickle jar
 - 1-cup heavy cream
 
Directions
- On piece of waxed paper combine salt, pepper and flour
 - Dredge beef in flour pound in flour
 - Reserve remaining flour
 - Arrange 1/2-slice bacon in center of each slice of beef top with 1/2 pickle
 - Roll up like a jellyroll, secure with wooden picks.
 - Melt shortening in medium skillet, brown the beef rolls well on all sides
 - Add onions and celery sauté for 5 minutes
 - Add water and pickle liquid
 - Bring to a boil cover simmer for 11/2 hours or until tender
 - Arrange beef rolls on serving dish, keep in warm place
 - Blend reserve four and cream gradually stir into pan juices
 - Cook over low heat stirring constantly, until thickened
 - Pour over beef rolls
