Oatmeal Waffles

Ingredients

  • 2 Egg yolks
  • 2 cups milk
  • 2 quick cooking oats
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/3 cup oil
  • 2 Egg whites, stiffly beaten

Directions

  1. Preheat waffle Maker.
  2. In food processor chop oats
  3. Put all ingredients, except egg whites, in a large mixing bowl.
  4. Add 1/3 cup of water
  5. Beat on low until moistened.
  6. Increase to medium, mix until smoothish.
  7. Add up to additional 1/3 cup of water to thin if needed.
  8. By hand, gently fold in beaten egg whites.
  9. Pur 3/4 cup batter over grids.
  10. Close Waffle Maker, bake until steam no longer escapes, about 3-5 minutes.
  11. Repeat. Serve while hot with your favorite topping.
