Tarr Clam Chowder
Ingredients
1 pt. ground clams 6 medium potatoes, diced and cooked 1 medium onion, diced 3 1/2 to 4 c milk 6 slices bacon, fried and crumbled 1 tsp salt 1/8 tsp pepper 1 Tbsp fresh rosemary
Directions
- Saute onion in 3 tablespoons of bacon grease.
- Add milk and potatoes.
- Cook over medium heat being careful not to let boil.
- Stir in seasonings and thicken with cornstarch (mixed with cold water).
- Add clams and cook 5 minutes. (Do not over cook clams as they will get tough)
