Sweet Potato Soufflé
Ingredients
- 4 c. cooked and masted sweet potatoes
- 1 c. sugar
- 1 stick of butter
- 1/2 c. milk
- 1 Tbsp vanilla
- 1 c. coconut (optional)
- 2 eggs
Topping:
- 1 c. brown sugar
- 1 c. nuts
- 1/3 c. flour
- 1 Tbsp corn meal
- 1 stick of butter
Directions
- Mix potatoes, sugar, butter, milk, vanilla, coconut and eggs.
- Pour potatoe mixture into a baking dish.
- Bake for 350 degrees for 30 minutes.
- Mix topping ingredients until crumbly:
- Mix brown sugar
- nuts
- flour
- corn meal
- butter
- Once souffle is done baking, remove from oven and put topping on potatoes.
- Place souffle back into the oven for about 10 minutes or until topping is bubbly.
