Sweet Potato Soufflé

Ingredients

  • 4 c. cooked and masted sweet potatoes
  • 1 c. sugar
  • 1 stick of butter
  • 1/2 c. milk
  • 1 Tbsp vanilla
  • 1 c. coconut (optional)
  • 2 eggs

Topping:

  • 1 c. brown sugar
  • 1 c. nuts
  • 1/3 c. flour
  • 1 Tbsp corn meal
  • 1 stick of butter

Directions

  1. Mix potatoes, sugar, butter, milk, vanilla, coconut and eggs.
  2. Pour potatoe mixture into a baking dish.
  3. Bake for 350 degrees for 30 minutes.
  4. Mix topping ingredients until crumbly:
  • Mix brown sugar
  • nuts
  • flour
  • corn meal
  • butter
  1. Once souffle is done baking, remove from oven and put topping on potatoes.
  2. Place souffle back into the oven for about 10 minutes or until topping is bubbly.
