Steak Tartare

Ingredients

  • 3 anchovy fillets
  • 2 tsp brined capers
  • 3 tsp Dijon mustard
  • 2 large egg yolks
  • 10 oz beef tenderloin
  • 2 tbls finely chopped red onion
  • 2 tbls finely chopped italian parsley leaves
  • 4 tsp olive oil
  • 3 dash of hot sauce
  • 4 dashes of Worcestershire sauce

Directions

  1. In a nonreactive bowl combine and mix evenly
  • Rinse and mince the anchovy fillets
  • Rinse the capers
  • Mustard
  1. Mix in egg yolk
  2. Fold remaining ingredients into mixture
  3. Season with salt and ground pepper to task.
  4. Serve immediately
