Southern Skillet Corn Bread
Ingredients
- 2 Cups Self-Rising Corn Meal Mix
- 1 Egg
- 1-2 Tbsp Sugar (If desired.)
- 1/4 Cup Vegetable Oil
- 1 1/4 Cups Milk or Buttermilk
- 2 Tbsp Butter
Directions
- Preheat oven to 425.
- Put butter in iron skillet and place in oven to preheat.
- Beat egg and add milk and oil.
- Mix well.
- In a separate larger bowl, mix together corn meal and sugar.
- Once oven is heated and the butter in the pan is completely melted, add the egg, milk, and oil into the cornmeal and mix until all ingredients are wet.
- Over-mixing can cause the corn bread to come out too dense and hard.
- Pour mix in to skillet and bake for about 20-25 minutes.
- To test, poke bread with a fork.
- If it comes out clean, it's done!
