Quick Kolacky

A jelly rolled pastry in the perfect size to snack.

Ingredients

  • 8oz cream cheese
  • 1/2 lb butter
  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • Solo preserves (or baking preserves)

Directions

  1. Cream the butter and cheese together, then work in the flour which has been sifted with the baking powder and sugar.
  2. Knead to form a stiff dough.
  3. Roll out about 1/4 inch thick; cut into rounds or squares and fill centers with any Solo preserves in the middle (about 1 tsp).  Fold the opposite corners over each other.  Pinch and/or use a drop of water to seal and pinch shut.
  4. Bake at 350 degrees for 20-30 minutes or until done.
