Potato Pancakes (not breakfast)
Ingredients
- ¼ cup milk
- 2 eggs
- 3 cups potatoes (grated ) I use fairly large potatoes.
- 1 small onion minced..
- 3 tbl. Flour
- 1-teaspoon salt
- 1-teaspoon sugar
- ¼ teaspoon baking powder
Directions
- Blender Method: Put ingredients as listed in blender, only cut potatoes in small pieces instead of grating. Blend for 10 seconds on High. Do not blend to long as it will get to watery. I usually do not peel the spuds unless the skin is in bad shape.
- Cover bottom of iron skillet with oil and heat.
- When oil is hot then drop 1 tbs or 2 tbs (all depends how big you want yours pancakes) of batter and fry 1 minute on each side.
