Pistachio Kiss Cookies
INGREDIENTS
- 1 cup butter, softened
- 2/3 cup powdered sugar
- 1 egg
- 1 tsp vanilla
- 3/4 tsp almond extract
- 1 (3.4oz) box pistachio pudding mix
- 2 cups flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2- 2 cups finely chopped pecans
- 1 bag Hershey kisses (unwrapped)
INSTRUCTIONS
- Cream butter and powdered sugar till smooth. Beat in egg, vanilla, and almond extract.
- Combine pudding mix, flour, baking powder, and soda.
- Roll dough into 1″ balls, then roll in pecans. Place on lined or lightly greased cookie sheets.
- Bake at 350° for 10-12 minutes. Once out of the oven, immediately press a Hershey kiss in the middle of each cookie. Remove cookies to cooling racks. Cool completely.
