Pickled Beets and Eggs

Ingredients

  • 3 cans of whole or sliced beats
  • 12 to 16 hard boiled eggs - pealed
  • 1 c sugar
  • 1 1/2 c vinegar
  • 1 c sliced onions (Optional)*

Directions

  1. Put beats in lg pot and bring to a boil.
  2. Add sugar and vinegar and continue to boil until the sugar is dissolved and the onions (if using onion at the end to keep a little crunch to them).
  3. Let cool and add to eggs, place in refrigerator overnight.
  • If you are using onions you want to choose a sweet~mild onion verses a more strong make you want to cry onion.
