Pickled Beets and Eggs
Ingredients
- 3 cans of whole or sliced beats
- 12 to 16 hard boiled eggs - pealed
- 1 c sugar
- 1 1/2 c vinegar
- 1 c sliced onions (Optional)*
Directions
- Put beats in lg pot and bring to a boil.
- Add sugar and vinegar and continue to boil until the sugar is dissolved and the onions (if using onion at the end to keep a little crunch to them).
- Let cool and add to eggs, place in refrigerator overnight.
- If you are using onions you want to choose a sweet~mild onion verses a more strong make you want to cry onion.
