PF Change Lettuce Wraps

Ingredients

  • 1lb cubed chicken or ground turkey
  • olive oil to cook
  • 3 minced garlic cloves
  • 3 cups thinly sliced cabbage
  • 1 cup shredded carrots*
  • 1 cup chopped onion
  • 1 cup chopped cashews
  • 3 tsp grated ginger root
  • 1/2 cup low-sodium soy sauce
  • 2 Tbsp Chinese Hoisin sauce
  • Boston lettuce leaves
  • salt and pepper
  • cayenne pepper (just a few shakes) if you want a bit of spice.

Directions

  1. Heat 1 Tbsp of olive oil in a cast iron skillet.
  2. Add garlic and ground or cubed meat, add salt and pepper.
  3. Cook until meat is cooked and browned.
  4. Place cooked meat in a bowl.
  5. Using the same cast iron skillet, heat 1 Tbsp olive oil in skillet.
  6. Once hot add onion and cook for about a minute.
  7. Add cabbage and carrots.
  8. Continue to stir them occasionally and cook them until cabbage is wilted about 10 minutes.
  9. While cooking the cabbage, rinse the lettuce and separate the leaves.
  10. Use a lettuce spinner or paper towels to remove excess water.
  11. Add the meat (that you set aside in a bowl) into the mixture.
  12. Add Chinese Hoisin and soy sauce.
  13. Add ginger and cashews.
  14. Add cayenne pepper if you want a bit of spice.
  15. Stir until meat is warmed up again.
  16. Place the meat mixture into a large bowl and serve with a side of Boston lettuce leaves.
  17. Have everyone grab a lettuce leave and spoon on the spicy chicken or turkey mixure.
  18. Wrap up as well and you can.

*Would recommend using a food processor for these items.
