PF Change Lettuce Wraps
Ingredients
- 1lb cubed chicken or ground turkey
- olive oil to cook
- 3 minced garlic cloves
- 3 cups thinly sliced cabbage
- 1 cup shredded carrots*
- 1 cup chopped onion
- 1 cup chopped cashews
- 3 tsp grated ginger root
- 1/2 cup low-sodium soy sauce
- 2 Tbsp Chinese Hoisin sauce
- Boston lettuce leaves
- salt and pepper
- cayenne pepper (just a few shakes) if you want a bit of spice.
Directions
- Heat 1 Tbsp of olive oil in a cast iron skillet.
- Add garlic and ground or cubed meat, add salt and pepper.
- Cook until meat is cooked and browned.
- Place cooked meat in a bowl.
- Using the same cast iron skillet, heat 1 Tbsp olive oil in skillet.
- Once hot add onion and cook for about a minute.
- Add cabbage and carrots.
- Continue to stir them occasionally and cook them until cabbage is wilted about 10 minutes.
- While cooking the cabbage, rinse the lettuce and separate the leaves.
- Use a lettuce spinner or paper towels to remove excess water.
- Add the meat (that you set aside in a bowl) into the mixture.
- Add Chinese Hoisin and soy sauce.
- Add ginger and cashews.
- Add cayenne pepper if you want a bit of spice.
- Stir until meat is warmed up again.
- Place the meat mixture into a large bowl and serve with a side of Boston lettuce leaves.
- Have everyone grab a lettuce leave and spoon on the spicy chicken or turkey mixure.
- Wrap up as well and you can.
*Would recommend using a food processor for these items.
