Pancakes

290g all purpose flour

30g sugar (or substitute monk fruit)

4 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

450g or 1 3/4 cups milk (or substitute oat milk)

60g butter (slightly melted)

2 tsp vanilla

1 egg

Mix all dry ingredients together in a large bowl.

Make a well in the center of the dry ingredients and add all the wet ingredients. With a wire whisk, mix into a thick and creamy batter. If too thick, add a few tablespoons of milk or water.

Set the batter aside and allow to rest while you heat up your pan or griddle. Grease with a bit of butter.

Pour 1/4 cup of batter onto the pan for each pancake. Cook on both sides.
