Microwave Greek Onions

Ingredients

  • 3 large Valida onions
  • 1 (10 oz) pkg frozen chopped spinach
  • 1 c Ricotta cheese
  • 1/2 c Feta cheese
  • 1 T Italian seasoning
  • 1/2 tsp cayenne pepper
  • 2 eggs, beaten
  • 2 T flour
  • 1/2 c grated Swiss or Parmesan cheese
  • 4 slices cooked bacon, crumbled

Directions

  1. Slice onions into 1/2 inch slices and layer in bottom of 10 inch pie plate that has been prepared with nonstick vegetable spray.
  2. Thaw, drain and squeeze all water from spinach.
  3. Mix next 7 ingredients together.
  4. Pour over onions.
  5. Top with cheese and bacon.
  6. Microwave, uncovered, on HIGH power for 10 to 15 minutes, turning dish 1/4 turn every 3 to 4 minutes.
  7. Let stand 5 minutes before serving.
