Microwave Greek Onions
Ingredients
- 3 large Valida onions
- 1 (10 oz) pkg frozen chopped spinach
- 1 c Ricotta cheese
- 1/2 c Feta cheese
- 1 T Italian seasoning
- 1/2 tsp cayenne pepper
- 2 eggs, beaten
- 2 T flour
- 1/2 c grated Swiss or Parmesan cheese
- 4 slices cooked bacon, crumbled
Directions
- Slice onions into 1/2 inch slices and layer in bottom of 10 inch pie plate that has been prepared with nonstick vegetable spray.
- Thaw, drain and squeeze all water from spinach.
- Mix next 7 ingredients together.
- Pour over onions.
- Top with cheese and bacon.
- Microwave, uncovered, on HIGH power for 10 to 15 minutes, turning dish 1/4 turn every 3 to 4 minutes.
- Let stand 5 minutes before serving.
