Jalapeno Poppers
Ingredients
- 1 block (8-ounce) low-fat cream cheese (Use low-fat to reduce the greasiness)
- 5 links of hot sausage (or 1 pound of sausage)
- 1 cup cheddar or parmesan cheese
Directions
- Preheat on oven to 425.
- Remove hot sausage from link and place in skillet over medium heat. Cook sausage until brown. Drain grease. Set aside to cool.
- Using latex gloves, cut jalapeno peppers in half lengthwise and remove seeds. I keep the ends on the jalapeno for easy pickup. Wash and discard seeds.
- In a large bowl, mix cream cheese, sausage and cheese together. Fill each jalapeno with a heaping spoonful of the sausage mixture. Arrange stuffed halves in a Pam sprayed baking dish.
- Bake in the oven for 20 minutes. The poppers should be bubbly and browned.
Serve with Ranch dressing or your favorite sause.
