Honey Mustard Coleslaw
Ingredients
- 1 cup white vinegar
- 2 Tbsp honey
- 1 head green cabbage, cored and grated (about 2 lbs)
- 2 carrots, grated dried onion flakes (to taste)
- salt to taste
- 1/2 tsp black pepper
- 3/4 cup mayonnaise
- 4 Tbsp Dijon mustard
- pinch of ground red pepper
- 1/4 cup chopped parsley
- 1/2 tsp mustard seed
Directions
- Reduce vinegar by half in a small saucepan over medium-high heat, about 10 minutes.
- Stir in honey, and let cool.
- Combine cabbage, carrots, and onions in a large bowl
- Toss with vinegar mixture.
- Add salt and black pepper and toss again.
- Chill for 20 minutes.
- Stir together mayonnaise, mustard, red pepper and parsley in a small bowl.
- Add mayonnaise mixture to cabbage.
- Chill 2 hours in an airtight container until ready to server.
