Hollandaise Sauce 1
Ingredients
- 3 egg yolks
- 1/4 c water
- 2 Tbsp lemon juice
- 1/2 c firm cold unsalted butter, cut into segments of 8
- 1/4 tsp salt
- 1/8 tsp paprika dash of ground red pepper
Directions
- In small saucepan, beat together egg yolks, water and lemon juice.
- Cook over very low heat, stirring constantly with a whisk, until yolk mixture bubbles at the edges.
- Stir in butter, 1 piece at a time, until melted and sauce is thickened.
- Stir in the remaining ingredients.
- Remove from heat and serve immediately.
- Great to serve over fish, eggs benedict, steamed veggies
