Hollandaise Sauce 1

Ingredients

  • 3 egg yolks
  • 1/4 c water
  • 2 Tbsp lemon juice
  • 1/2 c firm cold unsalted butter, cut into segments of 8
  • 1/4 tsp salt
  • 1/8 tsp paprika dash of ground red pepper

Directions

  1. In small saucepan, beat together egg yolks, water and lemon juice.
  2. Cook over very low heat, stirring constantly with a whisk, until yolk mixture bubbles at the edges.
  3. Stir in butter, 1 piece at a time, until melted and sauce is thickened.
  4. Stir in the remaining ingredients.
  5. Remove from heat and serve immediately.
  6. Great to serve over fish, eggs benedict, steamed veggies
