Greek Cheese Triangles

Ingredients

  • 1 (16-oz) pkg frozen phyllo pastry, thawed
  • 3 egg yolks
  • 1/2 lb Feta Cheese
  • 1/2 lb Ricotta Cheese
  • 2 tsp parsley, finely chopped
  • 1 T melted butter

Directions

  1. Beat cheeses, egg yolks, and parsley until well blended.
  2. Cut sheets of phyllo pastry lengthwise into 3 inch strips.
  3. Brush with melted butter.
  4. Put able 1 T filling at one end of the strip and roll into triangle (the same way a flag is folded).
  5. Place triangles, seam side down on a baking sheet.
  6. Brush top with melted butter and bake at 450 degrees for 10 minutes or until golden brown.
  7. Serve hot.
  8. These freeze after baking very well (reheat in oven).
  9. Be sure to keep phyllo pastry covered according to package directions since it dries out quickly.
