Greek Cheese Triangles
Ingredients
- 1 (16-oz) pkg frozen phyllo pastry, thawed
- 3 egg yolks
- 1/2 lb Feta Cheese
- 1/2 lb Ricotta Cheese
- 2 tsp parsley, finely chopped
- 1 T melted butter
Directions
- Beat cheeses, egg yolks, and parsley until well blended.
- Cut sheets of phyllo pastry lengthwise into 3 inch strips.
- Brush with melted butter.
- Put able 1 T filling at one end of the strip and roll into triangle (the same way a flag is folded).
- Place triangles, seam side down on a baking sheet.
- Brush top with melted butter and bake at 450 degrees for 10 minutes or until golden brown.
- Serve hot.
- These freeze after baking very well (reheat in oven).
- Be sure to keep phyllo pastry covered according to package directions since it dries out quickly.
