Fennel Salmon

Ingredients

  • 2 (8 oz) salmon filets with skin
  • 1/4 cup lemon juice
  • 1/2 cup finely chopped prosciutto
  • 1/4 cup chopped fennel fronds (the tops)
  • 1/8 tsp fennel crushed fennel seeds
  • 2 minced garlic cloves
  • olive oil

Directions

  1. Brush salmon with olive oil and sprinkle with black pepper.
  2. Set aside and preheat grill.
  3. Combine 1/8 tsp pepper, prosciutto, fennel fronds, fennel seeds, and garlic.
  4. Stir well.
  5. Heat a large nonstick skillet over medium-high heat.
  6. Coat pan with cooking spray.
  7. Saute mixture until prosciutto is crisp, about 3 minutes.
  8. Keep warm.
  9. Cook salmon on headed on grill about 5 minutes each side.
  10. Plate the salmon and top with the yummy prosciutto mixture.
