Fennel Salmon
Ingredients
- 2 (8 oz) salmon filets with skin
- 1/4 cup lemon juice
- 1/2 cup finely chopped prosciutto
- 1/4 cup chopped fennel fronds (the tops)
- 1/8 tsp fennel crushed fennel seeds
- 2 minced garlic cloves
- olive oil
Directions
- Brush salmon with olive oil and sprinkle with black pepper.
- Set aside and preheat grill.
- Combine 1/8 tsp pepper, prosciutto, fennel fronds, fennel seeds, and garlic.
- Stir well.
- Heat a large nonstick skillet over medium-high heat.
- Coat pan with cooking spray.
- Saute mixture until prosciutto is crisp, about 3 minutes.
- Keep warm.
- Cook salmon on headed on grill about 5 minutes each side.
- Plate the salmon and top with the yummy prosciutto mixture.
- About 170 calories for 4 servings
