English's Sweet Potato Biscuits
From English's Grill in Salisbury Maryland
Ingredients
- 3 1/2 cups mashed sweet potatoes
- 1 cup sugar (200g)
- 1.25 cups butter at room temperature (2 1/4 sticks)
- 2 cups cake flour alternate: 4 cups of all purpose (250g)
- 1 1/4 cups of all-purpose flour (170g)
- 3 Tbsp baking powder
- 1/2 tsp baking soda
Directions
Prepare the Sweet Potatoes
- Cook sweet potatoes in water.
- Once sweet potatoes are easy to poke with fork, drain.
- Chill sweet potatoes by placing in refrigerator or sit in cold water and ice for about 3 minutes.
- Mash sweet potatoes with fork and remove any fibers.
Prepare
- Combine first 3 ingredients in mixer at lower speed
- Add remaining 4 ingredients and mix well to incorporate
- Refrigerate mixture until dough is cold and stiff
Time to bake
- Preheat oven to 350 degrees.
- Roll out on floured surface to 1/4 inch thick and cut with biscuit cutter
- Place biscuits on cookie sheet sprayed with cooking spray
- Bake 15-18 minutes
