English's Sweet Potato Biscuits

Ingredients

  1. 3 1/2 cups mashed sweet potatoes
  2. 1 cup sugar (200g)
  3. 1.25 cups butter at room temperature (2 1/4 sticks)
  4. 2 cups cake flour alternate: 4 cups of all purpose (250g)
  5. 1 1/4 cups of all-purpose flour (170g)
  6. 3 Tbsp baking powder
  7. 1/2 tsp baking soda

Directions

Prepare the Sweet Potatoes

  1. Cook sweet potatoes in water.
  2. Once sweet potatoes are easy to poke with fork, drain.
  3. Chill sweet potatoes by placing in refrigerator or sit in cold water and ice for about 3 minutes.
  4. Mash sweet potatoes with fork and remove any fibers.

Prepare

  1. Combine first 3 ingredients in mixer at lower speed
  2. Add remaining 4 ingredients and mix well to incorporate
  3. Refrigerate mixture until dough is cold and stiff

Time to bake

  1. Preheat oven to 350 degrees.
  2. Roll out on floured surface to 1/4 inch thick and cut with biscuit cutter
  3. Place biscuits on cookie sheet sprayed with cooking spray
  4. Bake 15-18 minutes
