Eastern Shore Wet Corn Bread

Great for camping

1 stick of butter (8 Tbsp) unsalted

3 cups water

1  3/4 cups whole milk

4 large eggs

2 cups self-rising white corn meal (or yellow)

3/4 cup all purpose flour

3/4 cup sugar

1 tsp salt

Pre-grease cast iron skillet.  Pre-heat oven to 400°.  

Place water and butter in a medium sized pot on stove and bring to boil.  Meanwhile, whisk cornmeal, flour, sugar & salt in large bowl.  In a small bowl, whisk eggs, add milk, whisk. When water & butter boil, turn off heat and add in dry mixture and whisk until smooth. Then add in the egg/milk mixture & stir well. Pour into greased 9x13" pan, bake at 400° for 30 to 45 min.
