Eastern Shore BBQ Marinade

This is the recipe used by some of the fire departments that hold roadside BBQ's to raise money. This sauce has a salty flavor the really enhances the smoke flavor of the chicken.

Ingredients

  • 1/2 c. cooking oil
  • 1 cup vinegar
  • 2 Tbsp salt (yes, you are reading it correctly)
  • 1 1/2 tsp poultry seasoning
  • 1/4 tsp white pepper (or black)
  • 1 egg, beaten

Directions

  1. Mix all ingredients together and place in tight lock'n lock or tupperware container.
  2. Place chicken in the marinade and let set for a few hours or over night in the refrigerator.
  3. Place chicken on grill and baste chicken often with remaining marinade as the chicken cooks.
