DAN DAN Ramen

Main Ingredients

1 lb ground bison (or traditionally made with ground pork)

2 tsp hoisin

1 tsp white wine

1  garlic clove, minced

1 tsp soy sauce

1/2 tsp five spice

1 tbsp olive oil

1 pint Shittake mushrooms, sliced

2 tbsp shallots, minced

4 ramen cakes, seasoning pack discarded

Sauce Ingredients :

3 tbsp soy sauce

2 tbsp tahini

1 tbsp white wine

2 tsp coco aminos sauce

1/4 tsp five spice

1/4 cup chilli oil cruch

1/4 cup reserved water from cooked noodles

  1. Mix the sauce ingredents together in cup and set aside
  2. Bring a pot of water to a boil
  3. In a large skillet, cook the ground meat.  (If using ground pork, drain off fat)
  4. When the meat is almost done add hoison, white wine, garlic, soy and five spice and stir to combine
  5. Continue cooking an additional 2-4 minutes until bison is completely cooked.
  6. Remove the meat from the pan, set pan to side.
  7. Start cooking the  ramen noodles (without season packets) 4 minutes (or as stated on the package).   Before draining add 1/4 cup of strained water from the noodles to the sauce mixture.  Set the noodles aside for the moment.
  8. Using the same skillet the meat was cooked add olive oil and shittake mushroom and scook over medium heat.
  9. Once mushrooms are lightly browned add the shallots and cook until fragrant, about 2 minutes.  
  10. Add the sauce mixture (with 1/4 noodle water) to the mushrooms and cook on low heat for 2 minutes.
  11. Turn off heat to the skillet.  Add noodles and meat to the mushrooms.  
  12. Mix andServe.
