Daily Bread
Mix the following to make a Poolish the night before:
150g water (room temp)
1/8 tsp yeast
150g flour
The next morning mix:
280g water (room temp)
1/2 tsp yeast
poolish
Once mixed, add the following:
350g bread flour
50g whole wheat flour (if you don't have it, add this weight of bread flour)
10g salt
Mix and set aside for an hour.
Using wet hands, flip and turn the dough and let rise again for an hour in a bowl lined with parchment paper.
Once the dough has risen, plase a cast iron dutch oven (with lid) in the oven at 500 degrees. One hot, remove dutch oven and gently lower dough with parchment paper in the dutch oven. Cover with lid and place in oven.
Reduce heat to 480 degrees and bake for 15 minutes.
Remove lid and bake uncovered for 25 to 35 minutes more.
Once done, remove and let cool.
Remove parchment paper, slice and enjoy!
