Cuban Black Bean Soup

Ingredients

  • 1 lb black beans
  • 3 qt water
  • 3 onions, chopped
  • 2 green peppers, cut in strips
  • 5 garlic cloves, minced
  • 2 bay leaves
  • 1 tsp oregano
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1 c olive oil

Directions

  1. After washing beans thoroughly, soak beans overnight in 3 quarts water.
  2. Next day, boil beans in same water that has been used for soaking.
  3. Pour olive oil in a frying pan. add onions and green peppers, fry until limp but not brown.
  4. Add garlic, bay leaves, and oregano.
  5. Cook for 5 minutes and add to boiling black beans.
  6. Lower heat and cook until beans are tender.
  7. Serve over rice and top with chopped onion.
