Cuban Black Bean Soup
Ingredients
- 1 lb black beans
- 3 qt water
- 3 onions, chopped
- 2 green peppers, cut in strips
- 5 garlic cloves, minced
- 2 bay leaves
- 1 tsp oregano
- 2 tsp salt
- 1/2 tsp pepper
- 1 c olive oil
Directions
- After washing beans thoroughly, soak beans overnight in 3 quarts water.
- Next day, boil beans in same water that has been used for soaking.
- Pour olive oil in a frying pan. add onions and green peppers, fry until limp but not brown.
- Add garlic, bay leaves, and oregano.
- Cook for 5 minutes and add to boiling black beans.
- Lower heat and cook until beans are tender.
- Serve over rice and top with chopped onion.
