Creamy Horseradish

Ingredients

  • 1 horseradish root, about 3/4 lb
  • 1/4 c heavy cream
  • 2 Tbsp greek yogurt
  • 2 Tbsp creme fraiche
  • 1/2 lemon, juiced
  • 1 Tbsp Dijon mustard
  • 1 Tbsp chives, chopped

Directions

  1. Peal outer skin off root and finely grate the white root into a bowl.
  2. Stir in cream, greek yogurt, creme fraiche, lemon juice and mustard.
  3. Sprinkle with fresh chives before serving.
