Cranberry Jello Salad

Usually served at Thanksgiving or Christmas

Ingredients

  • ½ pound fresh cranberries, chopped and drained
  • 1-cup miniature marshmallows
  • 1 can (1 pound 4 ounce) crushed pineapple
  • ¼ cup sugar
  • 2 packages (3 oz each) raspberry flavored gelatin
  • 1-1/2 cups boiling water
  • 1 cup whipping cream
  • ¼ cup sugar
  • ½ cup chopped nuts

Directions

  1. Combine marshmallows, cranberries, undrained pineapple and 1/4-cup sugar
  2. Refrigerate overnight.
  3. Dissolve gelatin in boiling water, chill until thickened, and then whip.
  4. Whip cream with remaining ¼ cup sugar, fold into gelatin.
  5. Fold in cranberry mixture and nuts
  6. Pour into rectangular 3-quart dish.
  7. Chill until firm
