Cranberry Jello Salad
Usually served at Thanksgiving or Christmas
Ingredients
- ½ pound fresh cranberries, chopped and drained
- 1-cup miniature marshmallows
- 1 can (1 pound 4 ounce) crushed pineapple
- ¼ cup sugar
- 2 packages (3 oz each) raspberry flavored gelatin
- 1-1/2 cups boiling water
- 1 cup whipping cream
- ¼ cup sugar
- ½ cup chopped nuts
Directions
- Combine marshmallows, cranberries, undrained pineapple and 1/4-cup sugar
- Refrigerate overnight.
- Dissolve gelatin in boiling water, chill until thickened, and then whip.
- Whip cream with remaining ¼ cup sugar, fold into gelatin.
- Fold in cranberry mixture and nuts
- Pour into rectangular 3-quart dish.
- Chill until firm
