Corn and Black Bean Salad

Ingredients

  • 1/3 cup fresh lime juice
  • 1/2 cup olive oil
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon ground cayenne pepper
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 4 fresh white corn
  • 6 green onions, thinly sliced
  • 1/2 cup chopped fresh cilantro
  • tomatoes (optional)

Directions

  1. Place all ingredients except the tomatoes in a bowl, mix, and let set for at least an hour.
  2. Serve over sliced tomatoes
