Corn and Black Bean Salad
Ingredients
- 1/3 cup fresh lime juice
- 1/2 cup olive oil
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon ground cayenne pepper
- 2 (15 ounce) cans black beans, rinsed and drained
- 4 fresh white corn
- 6 green onions, thinly sliced
- 1/2 cup chopped fresh cilantro
- tomatoes (optional)
Directions
- Place all ingredients except the tomatoes in a bowl, mix, and let set for at least an hour.
- Serve over sliced tomatoes
