Chocolate Cream Pie

Ingredients

  • 3 squares Baker's unsweetened chocolate
  • 2 1/2 c milk
  • 1 c sugar
  • 6 Tbsp flour
  • 1/2 tsp salt
  • 2 egg yolks (slightly beaten)
  • 2 Tbsp butter
  • 1 tsp vanilla
  • 1 baked 9-inch pie shell

Meringue recipe to follow

  • 4 egg whites
  • 1/2 c sugar
  • 1/4 tsp cream of tartar

Directions

  1. Preheat oven to 400 degrees.
  2. Add chocolate to milk to double boiler and heat.
  3. When chocolate is melted, beat with whisk until blended.
  4. Combine sugar, flour, and salt; add gradually to chocolate mixture and cook until thickened, stirring constantly.
  5. Then continue cooking 10 minutes, stirring occasionally.
  6. Pour small amount of chocolate over egg yolks, stirring vigorously
  7. Return the chocolate mixture to double boiler and cook 2 minutes longer.
  8. Remove from boiling water and add butter and vanilla.
  9. Cool.
  10. Turn into pie shell.
  11. Meringue In bowl, with mixer at high speed, beat egg whites and cream of tartar to soft peaks.
  12. Gradually beat in 1/2 cup sugar until sugar dissolves and white stand in stiff peaks.
  13. Spread meringue over filling to edge of crust.
  14. Bake 10 minutes or until the meringue turns golden brown.
  15. Cool.
