Chocolate Cream Pie
Ingredients
- 3 squares Baker's unsweetened chocolate
- 2 1/2 c milk
- 1 c sugar
- 6 Tbsp flour
- 1/2 tsp salt
- 2 egg yolks (slightly beaten)
- 2 Tbsp butter
- 1 tsp vanilla
- 1 baked 9-inch pie shell
Meringue recipe to follow
- 4 egg whites
- 1/2 c sugar
- 1/4 tsp cream of tartar
Directions
- Preheat oven to 400 degrees.
- Add chocolate to milk to double boiler and heat.
- When chocolate is melted, beat with whisk until blended.
- Combine sugar, flour, and salt; add gradually to chocolate mixture and cook until thickened, stirring constantly.
- Then continue cooking 10 minutes, stirring occasionally.
- Pour small amount of chocolate over egg yolks, stirring vigorously
- Return the chocolate mixture to double boiler and cook 2 minutes longer.
- Remove from boiling water and add butter and vanilla.
- Cool.
- Turn into pie shell.
- Meringue In bowl, with mixer at high speed, beat egg whites and cream of tartar to soft peaks.
- Gradually beat in 1/2 cup sugar until sugar dissolves and white stand in stiff peaks.
- Spread meringue over filling to edge of crust.
- Bake 10 minutes or until the meringue turns golden brown.
- Cool.
