Chicken Pepitoria

Ingredients

  • 1 stewing Chicken (about 3lbs) cut in pieces 8 pieces
  • Salt and pepper
  • 1/2 c. lard (oil)
  • 1/2 . finely chopped onions
  • 2 cloves garlic, chopped
  • 1 T chopped parsley
  • 1 tsp flour
  • 1/2 c. white wine
  • 1/2 tsp thyme
  • Water
  • 2 T toasted almonds
  • 1 hard cooked egg yolk

Directions

  1. Clean chicken; season with salt and brown in oil.
  2. Remove from pan; saute onions until golden brown.
  3. Add garlic and parsley and cook gently for a moment.
  4. Stir in flour; gradually pour in wine.
  5. Add thyme and heat to the boiling point and return chicken to pan.
  6. Pour in a cup of water; season with salt and pepper to taste.
  7. Cover and cook gently until the chicken is tender.
  8. Pound almonds and yolk in a mortar and stir into the mixture for 20 minutes before serving.
