Chicken Pepitoria
Ingredients
- 1 stewing Chicken (about 3lbs) cut in pieces 8 pieces
- Salt and pepper
- 1/2 c. lard (oil)
- 1/2 . finely chopped onions
- 2 cloves garlic, chopped
- 1 T chopped parsley
- 1 tsp flour
- 1/2 c. white wine
- 1/2 tsp thyme
- Water
- 2 T toasted almonds
- 1 hard cooked egg yolk
Directions
- Clean chicken; season with salt and brown in oil.
- Remove from pan; saute onions until golden brown.
- Add garlic and parsley and cook gently for a moment.
- Stir in flour; gradually pour in wine.
- Add thyme and heat to the boiling point and return chicken to pan.
- Pour in a cup of water; season with salt and pepper to taste.
- Cover and cook gently until the chicken is tender.
- Pound almonds and yolk in a mortar and stir into the mixture for 20 minutes before serving.
