Cauliflower Salad
Ingredients
- 2 c thinly sliced raw cauliflower
- 1/2 c chopped pitted ripe green olives
- 1/3 c finely chopped green peppers
- 1/2 c chopped pimiento
- 3 T finely chopped onions
Dressing Ingredients
- 4 1/2 T salad or olive oil
- 1 1/2 T lemon juice
- 1 1/2 T wine vinegar
- 1 tsp salt
- 1/2 tsp sugar
- Dash of pepper
Directions
- In medium bowl, combine cauliflower, olives, green pepper, pimiento and onion.
- In another bowl make dressing.
- Combine oil, lemon juice, vinegar, salt, sugar and pepper.
- Beat with rotary beater until well blended.
- Pour over cauliflower mixture.
- Refrigerate, covered, until well chilled at least 1 hour.
- Spoon salad into bowl or arrange on lettuce on individual salad plates.
