Caesar Salad dressing

3 cloves garlic, peeled and chopped

3 egg yolks

1 TBSP Dijon mustard

2 TBSP Worcestershire sauce

1 TBSP fish sauce

2 anchovy fillets

1/4 cup grated Parmesan cheese

2 TBSP lime or lemon juice

1/2 tsp salt

1 tsp pepper

1 TBSP water

1 cup light olive oil (or 7 oz of firm tofu)

Place the garlic, egg yolks, mustard, Worcestershire sauce, anchovies, Parmesan cheese, juice, salt, pepper and water into a food processor. Process until the dressing is combined and thick. With the processor running slow add the oil slowly into the mixture until it is well incorporated.

Add to romaine lettuce, bacon and croutons for a Caesar Salad.
