Bread Stuffing

Derezinski family stuffing for Thanksgiving.

Ingredients

  • 1 lb. Bacon
  • 2 cups onion
  • 2 cups celery
  • 1-1/2 lbs. (24oz. Loaf) bread
  • 2 eggs
  • 1/8 to a 1/4-cup poultry seasoning to taste
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cups milk
  • 3 cups water

Directions

  1. Break up bread into small pieces and let dry (overnight is best)
  2. Chop bacon (fine) and fry in skillet until crisp
  3. Chop onion and celery (fine).  Add to skillet and sauté until tender
  4. Heat milk and water. Pour over bread and cover to soften
  5. Add 2 eggs to bread mix well
  6. Add poultry seasoning salt and pepper Mix well
  7. Add bacon, celery and onions
  8. If stuffing is not moist add more water
  9. Stuff turkey and bake remainder in separate pan
  10. Stuffing expands during cooking, leave room for expansion
