Blueberry Mold
Ingredients First layer
- 1 pkg lemon jello
- 1 (No.2) can blueberries, drained (The number 2 is the can size) For more info http://homecooking.about.com/library/archive/blhelp7.htm
Ingredients Second layer
- 1 pkg. lemon jello
- 1 3/4 c boiling water
- 2 (3 oz.) pkg.cream cheese
- 1/2 pt. heavy cream
- 1 21/2 T confections sugar
- 1 tsp vanilla
Directions
- Drain berries; measure juice and add water to make 1 3/4 cups.
- Heat to boiling; add jello and stir to dissolve.
- Let cool until consistency of egg whites.
- Fold in berries and turn into 1 1/4 quart mold.
- Dissolve second jello in boiling water.
- Chill until it starts to jell.
- Combine softened cheese with cream and beat until stiff.
- Add sugar and vanilla and blend.
- Beat into partially thickened jello and blend.
- Pour over first layer.
- Let stand overnight; you get better results.
