Black Joe Cake
For people who say they don't like coffee until they try this cake.
Ingredients
The cake batter (can be found on the back of Hershey Cocoa's box):
- 2 cups sugar
- 1 3/4 cup all-purpose flour
- 3/4 cup Hershey's Cocoa
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil (or sub with equal parts apple sauce)
- 2 tsp vanilla extract
- 1 cup hot coffee (only substitution of the Hershey recipe)
The icing:
- 1/2 cup shortening
- 1/2 stick of butter
- 3/4 cup cream cheese
- 1 box 10x powdered sugar (3 3/4 cups of 10x sugar)
- 1 tsp vanilla
- 3/4 cup peanut butter
Directions
- Heat oven to 350.
- Grease and flour 2 nine-inch baking pans.
- Combine dry ingredients in large bowl.
- Add eggs, milk, oil and vanilla.
- Beat on medium speed for 2 minutes.
- Stir in hot coffee.
- Batter will be thin.
- Pour in pans.
- Bake 30 to 35 minutes until toothpick check is clean.
- Cool 10 minutes and remove cakes from pan.
*This recipe makes more then the 2 nine-inch, so I use 3 eight-inch pans. If you don't have 3 eight-inch pans, use the 2 nine-inch pans and make a few cupcakes with the remaining batter.
Icing
- Just mix these ingredients together slowly in order they are listed, spread on cakes when cool.
