Best Ever Chili

Ingredients

  • 1 ½ tbsp. cooking oil
  • 1 can original rotel
  • 2 to 4 medium onions
  • ½ of a 3 inch green hot pepper (Optional for very hot)
  • 2 bell pepper chopped fine
  • 1 bottle 1 oz to 1.5 ozchili powder
  • 2 celery stalk chopped fine
  • ¼ cup diced green chili
  • 1 can diced tomato
  • 1 ½ tbsp. salt
  • 1 can tomato sauce small
  • 4 garlic cloves
  • 2 ½ cups water
  • pepper to taste
  • 2/3 cup tomato paste
  • garlic salt to taste
  • 4 lbs. ground chuck or chili meat
  • 2 cans of black beans (optional)

Directions

  1. Put oil in 6-qt. pot.
  2. Add first 4 ingredients.
  3. Cook until onion is transparent.
  4. Add meat slowly and stir until redness disappears.
  5. Add remaining ingredients stirring after each addition.
  6. Lower heat to simmer for 1 ½ to 3 hours.
  7. Stir frequently to prevent scorching.
  8. Top with cheese and Lettuce (optional).
