Beer and Cheddar Fondue

Swiss fondue brought to America with beer and cheddar cheese.

Ingredients

  • 1/2 pound ground pork sausage
  • 6 tablespoons butter
  • 1 onion, chopped
  • 1 garlic clove, chopped
  • 6 tablespoons all-purpose flour
  • 2 cups milk
  • 16 ounces cheddar cheese, shreeded
  • 1 cup beer
  • 4 ounces green chiles, chooped
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground red peper

Directions

  1. Cook sausage in large saucepan over medium heat until it crumbles.  Drain and set aside. Melt butter over medium head.  Add onion and garlic; saute until onion is translucent. Make sure to stir constantly.
  2. Add flour, and cook for 1 minute
  3. Gradually add milk until thickened
  4. Add cheese and stir until melted
  5. Remove from heat and add sausage, beer, chiles, salt, and red peper
  6. Put in fondue pot and enjoy
