Beer and Cheddar Fondue
Swiss fondue brought to America with beer and cheddar cheese.
Ingredients
- 1/2 pound ground pork sausage
 - 6 tablespoons butter
 - 1 onion, chopped
 - 1 garlic clove, chopped
 - 6 tablespoons all-purpose flour
 - 2 cups milk
 - 16 ounces cheddar cheese, shreeded
 - 1 cup beer
 - 4 ounces green chiles, chooped
 - 1/2 teaspoon salt
 - 1/4 teaspoon ground red peper
 
Directions
- Cook sausage in large saucepan over medium heat until it crumbles. Drain and set aside. Melt butter over medium head. Add onion and garlic; saute until onion is translucent. Make sure to stir constantly.
 - Add flour, and cook for 1 minute
 - Gradually add milk until thickened
 - Add cheese and stir until melted
 - Remove from heat and add sausage, beer, chiles, salt, and red peper
 - Put in fondue pot and enjoy
