Banana Bread with nuts and chips
- 1/2 cup butter, softened
- 1/2 cup sugar (I substitute 1/4 cup Monkfruit)
- 2 eggs
- 4 very ripe bananas
- 1 1/2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla
- 1 cup chopped walnuts (or any other nuts you prefer, I like to blend walnuts, pecans and brazilian nuts)
- 1/2 cups chocolate chips
Streusel Topping (optional)
- ½ cup all-purpose flour
- ½ cup brown sugar
- 1 ½ tablespoon cinnamon
- ½ teaspoon kosher salt
- 3 1/2 Tbsp unsalted butter, melted
Preheat oven to 350 degrees. Cream together butter and sugar, add in eggs, bananas. Add in dry ingredients slowly. Add optional Streusel Topping.
Pour batter in a parchment paper lined 9x5x3 pan.
Bake for 55 minutes.
Let cool on a cake rack until cool.
