Bacardi Rum Cake
Cake Ingredients
- 1 c chopped peacans
 - 1 (18 1/2 oz) yellow cake mix
 - 1 (3 3/4 oz) instant vanilla pudding mix
 - 4 eggs
 - 1/2 c cold water
 - 1/2 c vegetable oil
 - 1/2 c Bacardi dark run
 
Glaze Ingredients
- 1/2 lb butter
 - 1/4 c water
 - 1 c sugar
 - 1/2 c Bacardi dark rum
 
Directions
- Preheat oven to 325 degrees.
 - Grease and flour 10 inch tube pan.
 - Sprinkle nuts over bottom of pan.
 - Mix all cake ingredients.
 - Pour batter over nuts in pan.
 - Bake on hour.
 - Cool.
 - Invert on serving plate.
 - Prick top.
 - For glaze, melt butter, stir in water and sugar.
 - Boil 5 minutes, stirring constantly.
 - Stir in rum.
 - Drizzle over cake.
 - Serve with whipped cream on side if desired.
